В вашем файле opendkim.conf
Mode v
задает режим работы только проверять , поэтому ваши исходящие сообщения никогда не будут подписаны.

Выбирает режимы работы. Допустимые режимы: s (знак) и v (проверка). По умолчанию - v.
. Необходимо изменить на s (только подписать) или sv (подписать и подтвердить), чтобы подписать исходящий
сообщений.
Я подозреваю, что ваши записи в журнале поступают из входящей почты (то есть с verifier.port25.com
), которая проверяется , а не из исходящей почты, подписанной .
«Хорошая» запись в журнале для подписи исходящего сообщения:
